Excellence in Gastronomy

This year the INC is taking an innovative and different approach to the Award for Excellence in Gastronomy.

In previous years, this award was given to a chef that had demonstrated dedication and success in using nuts and dried fruits as a principle part of their recipes. However, this year, the INC is excited to change the process and make the award more of a contest, creating healthy competition and innovation among chefs. The INC will use this opportunity to reach out to local culinary organizations in an effort to engage local chefs. As the INC Congress this year will take place in Dubai, The Emirates Culinary Guild will be the association taking part in the competition.

The contest will be laid out as follows:

  • An invitation containing the rules and process will be sent to The Emirates Culinary Guild. They are a national member of the World Association of Chefs Societies (WACS). WACS is the premier global network for chef associations around the world.
  • Once The Emirates Culinary Guild has received the invitation, the offer will be sent out to all chefs that are members and wish to compete for the Award for Excellence in Gastronomy.
  • The chefs are charged with the task of creating a unique and innovative dish using nuts and/or dried fruit of their choice.
  • The Emirates Culinary Guild will select the top five chefs from the initial group of contestants.
  • The top 5 chefs will then be invited to attend the Gala Dinner of the congress where the Executive Committee of the INC will select the chef to be awarded the Award for Excellence in Gastronomy.
  • The selection will be based on the use of the nut and or dried fruit (50%) and the innovativeness of the dish (50%).

Once the winning chef has been announced, the winner will select a nut or dried fruit of their choice and will have the opportunity to travel to a country that produces that nut or dried fruit. During this visit, they will tour and visit production facilities to further learn about the product. The winning chef will also collaborate with the communication and marketing plan of the INC and will contribute recipes.
